When C and I married, I had to get used to cooking for only two people. When I lived with my parents, if there was too much food, it would get passed on to one of my relatives that lived next door.
That would have still been possible, but it was a lot easier just to learn to cook for two people. I also love to use my George Foreman grill! This is one of my favorite meat dishes for two since it is easy and extremely versatile. Sometimes I season the chops with just salt and pepper. Sometimes I use salt, pepper, and Italian seasoning; sometimes just seasoning salt, and every once in a while I will use dry ranch dressing mix for a little kick.
2 bone-in pork chops
1-2 tbsp olive oil
2 pinches salt
1/8 tsp black pepper (or to taste)
variations: Italian seasoning, seasoning salt, dried ranch dressing mix
Preheat the grill for about 5 minutes before putting on the chops. Pour the olive oil, salt, pepper, and any other seasonings in a medium bowl. Stir to combine.
Dredge the chops in the oil mixture to coat.
Place the chops on the hot grill and cook for 10-12 minutes. Enjoy with any side dishes of your choosing. I usually serve mine with roasted potatoes and salad.
