Menu Plan Monday

Happy Independence Day, everyone!  Hopefully, today will be filled with celebrations of all kinds.  C & I decided to celebrate by staying home and taking it easy on this long weekend and it was just what we needed! 

I don’t have as many meals listed this week because most of what I am making will last us for 2 or more meals which I like very much for a busy week like this one.  I made enough shredded BBQ yesterday to have enough for today as well and the other dishes make plenty, too.

This weekend is my 20 year high school reunion and I think it will be tons of fun.  I have helped plan it with 3 or 4 other ladies so hopefully everyone that is coming will have a great time.  I know it has been really enjoyable to spend time with people that I don’t get to see very often.

Menu Plan Monday

Another week has passed and I survived my first week back to work after vacation, but just barely.  Why does that first week back seem so long…even longer than the week before vacation.  Oh, well.  At least there is a long weekend coming up for the Independence Day holiday.  Happy birthday, America!

This week’s menu is made up of old faithfuls and favorites because it is time to enjoy the summer and not worry about fancy meals quite so much.  It will be nice to keep it simple and be able to enjoy a little deck time in the evenings just relaxing.  There is also have an event coming up very very soon, my 20th high school reunion. Gulp!  I can’t believe I am old enough to have a 20 year reunion, but since I wasn’t a child genius, I am certainly the right age.  I am looking forward to seeing some of my classmates that I haven’t seen probably since graduation.  I am sure it will be a blast!

Menu Plan Monday

Good Monday morning, readers!  Sorry I was MIA last week, but it was for a very important reason.  C & I celebrated our 10th anniversary last Tuesday and decided a few months ago to do something neither of us had ever done to commemorate it…go to the ocean!

We spent last week road-tripping from our home in South Central Kentucky to Virginia Beach, Virginia and had the most awesome time!  I have so many things to share with you and it will all start this Thursday in my next Thoughtful Thursday post.  I usually do those every other week, but I have so much to pass on that it will be a weekly highlight for the next little bit.  I think we toured and “sight-saw” everything we possibly had time for.  I don’t want to give away too much.  Check back on Thursday for the first installment.

This week is back to reality with work and home, but that is okay.  Just knowing that we had the opportunity to do the things we did last week is enough to make me appreciate our jobs that let us be able to! A little side-note about this week:  1 night we are going with my dad to a baseball game as part of his Father’s Day and 1 night is grocery night.  I did say we were getting back to reality and my cupboard is bare!

Menu Plan Monday

Good morning, fearless readers!  It is hard to believe but June is here and in full swing.  In just a few short days, C & I will celebrate our 10th anniversary in a very special way and I promise to share details very soon.  It doesn’t seem possible that it was 10 years ago that we were planning our little wedding and honeymoon.  Time has gone by so fast and so many things have happened, both good and bad, but I wouldn’t change our time together for any reason.  C is my best friend and playmate!

This week’s list is a little on the simple side.  I have multiple days of court this week and lots of anniversary celebration preparations to make!  I can’t wait!

Menu Plan Monday

Happy Memorial Day to everyone!  I hope the weather is being nice so we can all get out and enjoy the day.  C & I went to see the Bowling Green Hot Rods baseball team play Saturday night and enjoyed a fireworks show after the game.  If you have never been to a minor league baseball game and there is one near you, you really need to go!  Even if you are not a big baseball fan, there will be something fun to watch.  There are all kinds of fun, and most of the time funny, games going on between the innings for the fans to win prizes.  It really is a neat atmosphere and at $10 a person, a fairly cheap night out.

But that is not what you are looking for today, is it?  Nope, you want to know what we are eating this week, don’t you?  Well, here it is!!

Menu Plan Monday

Good morning, folks, and welcome to this week’s edition of Menu Plan Monday!  Yay!!  My list is a little bit shorter than normal this week because of a few events this week.  Let’s see…C’s cousin is graduating from high school so we have class night and graduation and then we have tickets to a Bowling Green Hot Rods ballgame.

We will have lots of fun, but lots of running around means not as much cooking around here.  That’s okay.  Everyone needs a break now and then, and eating out is not the worst thing in the world!  Wink, wink!!

Menu Plan Monday

Happy Monday, everyone!  I hope the weekend was good to you and this week is even better.  C & I had a very busy, but very good weekend.  It was so busy, in fact, that my little menu plan for last week got turned on its head a little bit.  But not to worry…what didn’t get made last week will get made this week.  Can’t leave these recipes out, now can we?

We finally made it to the grocery on Friday night and I thought we were going to need two carts.  How embarrassing!  I had not been to the big grocery for four or six weeks and it really showed.  Saturday afternoon, I had a short class reunion meeting and Saturday night, we went to my nanny’s house.  Sunday morning was church services and Sunday night was a very special meal for C’s youngest first cousin.  He is graduating from high school in a couple of weeks, so the church threw a pizza party for him and C & I made a slideshow of his life to watch that night.

Menu Plan Monday

Today is May 9th and the weather is finally turning spring-like here in South central Kentucky and not a moment too soon!  As most of you know, there was a little horse race held in Louisville, Kentucky on Saturday.  You might have heard of it…the Kentucky Derby?  I thought so.  C & I watched a little of the pre-race coverage and the race itself on television and I loved seeing all of the gorgeous hats that the ladies were wearing.  There was one that was at least four feet across, but it was beautiful!

This week’s menu is a little short since it is grocery week. Groan!  I think C & I will try to make the best of it though.  We might even eat out and take in a movie before we hit the aisles.

Menu Plan Monday

Good Monday morning, everyone!  I trust that all of my readers had a wonderful weekend and are looking forward to this week.  C & I traveled to Gallatin, Tennessee with my dad and grandparents to attend my first cousin’s wedding at historic Rose Mont Mansion on Saturday.  Thankfully the weather was great for their outdoor ceremony and I plan on showing you the festivities in my next Thoughtful Thursday post so please check back!

This week’s meal plan is a little scattered since we have court two days this week and I am off on Thursday.  Yippee!!  I am taking Nanny and Aunt M to shop for flowers on Thursday at a new place so hopefully I can have a few shots of that as well.  Stay tuned!  Also, we are participating in a fundraiser for our local high school’s Project Graduation celebration on Friday by purchasing grilled steak sandwiches for supper that night.  What a sacrifice! Ha, ha!

Menu Plan Monday

Another Easter has passed and now spring can really begin as far as I am concerned.  We have had lots of cool and rainy weather so if the sun wants to shine for many days ahead that is just fine with me.  Whenever the weather does cooperate, we hope to get a few small outside projects completed, mostly things that are already started and just need finishing.  I will keep you posted on our progress.

This week’s meal list is pretty simple.  We have a wedding to attend next weekend so there will be a little less cooking, but still plenty of good things to eat!  I am including the cheesy corn chip skillet again this week because it did not get made last week.  Reruns aren’t too bad, are they?
