I found this recipe and a great new blog on Pinterest.  I had never heard of this blog before but now I am hooked!  The name is Plain Chicken and there is a funny story behind the name so go check it out as soon as you can!.  She is a fellow Southerner and the food on her site looks so good.

Bubble Up Pizza is easy, good, and the recipe makes a huge pan.  In fact, there was enough for two suppers for C and I and 2 lunches for me.  That is a lot of food from one pan.  The original recipe says to use the pizza toppings of your choice so I chose ground beef, Italian sausage, onions and green peppers, but the there are many, many combinations you can try.  Have fun with it and see what you can come up with.

2 cans (12oz. each) golden layer buttermilk biscuits

1 jar (15 oz.) pizza sauce

2 cups shredded mozzarella cheese

1/2 lb. lean ground beef

1/2 lb. Italian sausage

1 bell pepper, diced

1/2 medium onion, diced

Cook the ground beef, sausage, pepper and onion until the meat in thoroughly cooked and the veggies are soft. 

Preheat oven to 375 degrees and spray a 9×13 inch baking pan with non-stick spray.  Cut the biscuits into quarters and place in a large bowl.  Toss the biscuits with the sauce.  Add the pizza toppings and half of the cheese.  Toss until well blended.

Pour the mixture into the prepared baking dish and top with remaining cheese.  Bake for 25-30 minutes or until biscuits are done.  This is enough for a whole meal so I just served mine with some fresh chopped veggies on the side.

Menu Plan Monday

Hello, my lovely readers!  It is Monday again which means another weekend has flown right by.  Where does it go?  The weather was wonderful and perfect for getting out and doing something.  Our “something” on Saturday was pressure washing the front of the house.  Yay. (That was some sarcasm for you if you couldn’t tell.)  C & I learned a neat little trick though.  C wondered if the dirt and mildew would come off easier if we sprayed on some soap first and let it soak for a few minutes.  I happened to have an empty spray bottle so we tried it.  Score!!!  In fact, it worked so well we had C’s dad stop at the local store and pick us up a one gallon pressure garden sprayer.  Why hadn’t we learned this before?  The work went so much faster.  We will hopefully finish the back this week and do our tall north end in the next couple of weekends.  It already looks so much better with what we have done.

Also this weekend, our little hometown had its annual fall festival with a very special guest.  A young man who graduated from our high school just a few short years ago was recently awarded the Medal of Honor for his brave acts in the war in Afghanistan.  He was honored locally by being the grand marshal of the parade and having a street named after him.  We weren’t able to attend, but from what I have heard, the ceremony went great and there was a huge crowd to greet him.

Up until now, you would not have found many, if any, ice cream recipes on this little blog o’ mine.  Why?  Well, I am extremely lactose-intolerant.  So bad that one little bite of regular ice cream will send my stomach into fits for hours, and that is so NOT FUN!  I can take the medicine that helps, and it does just that, helps, but it does not go away completely. 

All of that is about to change.  You may see a dozen ice cream or frozen treat recipes on here all in a row because of a birthday gift that I received.  My in-laws (God bless ‘em, they are wonderful!) gave me a tabletop ice cream maker along with a recipe book titled “lick it!”, which is full of vegan ice cream recipes.  Now, I am not a vegan, and probably will never be a vegan, but one thing that vegans and I share is a need for food without dairy in them.  This book rocks!

The ice cream maker is a Cuisinart model ICE-21 and it is awesome!  Check it out here for all of the info.  It makes 1.5 gallons at a time in about 20 minutes.  At that point the ice cream is like soft serve which is the way I like it.  If you want it firmer, just put the deliciousness into a freezer-safe lidded container and let it harden for a couple of hours.  That is if you can wait that long!!

So far I have made the chocolate rocky road, vanilla, and orange sherbet recipes from the “lick it!” book, and they are great!  I couldn’t tell that they weren’t the real thing.

If you are lactose-intolerant or vegan or just want to try something a little different, get yourself an ice cream maker and this book.   A little word to the wise, you might want to invest in coconut milk and soymilk stocks.  Just wait, you will understand!
