C & I attended a baby shower for our pastor’s daughter and son-in-law a few weeks ago and I took a couple of dishes.  Since the weather was so hot, I wanted to take something cool and refreshing which led me to two of my summer favorites: fresh veggies and fruit with their respective dips. 

Instead of just chopping up the fruit and putting it on a tray or in a bowl, I made fruit kabobs and they turned out great!  You will see them in the dip photo below. This dip recipe has been around for decades and you have probably seen it many times.  It is my absolute favorite fruit accompaniment and makes a great base for a fruit pizza.

1 8oz. package of cream cheese or neufchatel cheese

1 7oz. container of marshmallow cream

1 tsp. vanilla extract

Let the cream/neufchatel cheese come to room temperature.  Beat it with an electric mixer until there are no lumps.  Add the marshmallow cream and beat until smooth.  Stir in the vanilla extract then refrigerate for a couple of hours until ready to serve.

Serve this with fresh fruit or use it as a base for a fruit pizza.

People, let me tell you about this dish!  I have made it so many times in the last few months and the last time I realized that I had not posted about it.  That had to change because everyone else needs to know how tasty and easy this is. 

It would be awesome at parties, but I fix it just for C & I for supper and then have the leftovers for lunches later.  C LOVES it and always asks for seconds when I make it.  The flavors are awesome and the gooey melted cheese is so so good.  Try it and see!

Easy Enchilada Dip 1

1 lb. ground beef

1/4 medium onion, finely diced

1/4 tsp. minced garlic

1 can red enchilada sauce

2 cups shredded cheese (I used the Fiesta blend.)

Corn chips or tortilla chips

Cook the ground beef in a medium skillet over medium heat until there is no pink left.  Add the onion and minced garlic and cook for about 3 minutes or until the onion is soft.  Sir in the sauce and the cheese.  Cover the pan and allow the cheese to completely melt.

Serve with the chips of your choice.  I found these Pringles tortilla chips and they were great!  This makes a meal just by adding a big green salad on the side.  Love it!!  Thanks, Add A Pinch, for this recipe.

C & I were invited to a Super Bowl party back in February so I went looking for a new dip recipe to try.  Of course, I found this on Pinterest from the blog My Kitchen Addiction.  This is the link to the original recipe.  I tweaked it a little to suit my taste and the ingredients I had and it turned out great.  There were no leftovers at all to bring back so I know it was a success.

1 pound lean ground beef

1/2 white onion, diced

1 tsp. dried minced garlic

8 ounces light cream cheese, softened

1/2 cup light ranch dressing

2 tbsp. taco seasoning

4 ounces cheddar cheese, shredded 

Tortilla chips

Preheat oven to 400 degrees and spray a pie pan (or rectangle baking pan) with nonstick spray.  The pan I used is about 6×8”.  In a skillet over medium heat, cook the ground beef, onion and minced garlic until the beef is cooked through.

In a bowl, combine the cream cheese, ranch dressing, chili powder, and ground cumin.  Add the beef mixture and half of the shredded cheese.  Stir to combine.  Pour that mixture into the prepared baking dish and top with the remaining cheese. Bake for 15-20 minutes or until the cheese is golden and bubbly.  Serve with tortilla chips or corn chips.
