Let me warn you right now that this is going to be a long and photo heavy post, but it is full of awesome Kentucky made products so it is so worth reading until the end. Last Saturday, C & I travelled to Lexington, Kentucky for the 5th annual Kentucky Proud Incredible Food Show.  This is the first time that we have gotten to attend, but hopefully it will not be the last.  I really had no idea that so many food products were produced right here in the Commonwealth and we couldn’t taste test and buy every one of them, but I wanted to let you know about a few of our favorites.

We started out the day by watching a demonstration by the headliners of the show, Jamie and Bobby Deen.  They were so funny and entertaining and the time flew right by while we were watching them.  Jamie was throwing candy out to the audience during the show while they were cooking.

The Marketplace was almost overwhelming. There were so many booths and so many people that I really had to focus in and get my bearings to navigate.  C & I looked at most of the booths and tried a few samples.

Of course, with my sweet tooth, I was loving the bakery and candy store displays! The first photo is the Midway College Bakery booth.

Can you believe all of this is produced right here in little ol’ Kentucky?  It really took my breath away and these photos don’t show half of what was there.  Now, let’s get to the goodies we actually got to try and purchase.  Yum! 

One of the first items we tried was flavored popcorn from A-maize-ing Caramel Corn, which is produced in Georgetown, Kentucky. We tried (and bought) the caramel and cheddar versions and they were so good!

Macarons have been the hot sweet in the blogging world for a little while now, but I haven’t taken the time to try them because they are hard to make.  Actually, I had never gotten the chance to even taste one until Saturday. 

La Petite Sucre out of Winchester, KY, had the prettiest display of macarons in many flavors for sale.  I decided to try a salted caramel one and it was tasty, but it was not what I expected at all.  The cookie part is very crunchy and it has a delicious creamy filling.  My first macaron experience was a positive one, but I probably won’t be trying them at home any time soon.

Another Kentucky product that I have heard a lot about but had never tried was beer cheese.  The first beer cheese booth we came to was Larry Mac’s Beer Cheese.  C & I both tried a little on a cracker and thought the same thing: YUM!  Needless to say, a little package of that came home with us.  Larry Mac’s booth was really cute as well.  Loved the pepper lights!

Speaking of peppers (how’d you like that segue way), we also found some tasty salsa as well.  Me Salsa is based in Louisville, Kentucky and is made with a special kind of pepper.  They are in the running for a small business grant, so please click over to their Facebook page and give them a like. On the same condiment note, we also purchased a bottle of homemade ketchup called Grandma Carolyn’s Ketchup which is also made in Georgetown.  I can’t wait to try this in a meatloaf or just on a big ol’ juicy hamburger.

 Blue Bell Creameries was giving away a full scoop of their ice cream so, of course, we had to partake of that as well.  C & I both got Dutch Chocolate and it was so creamy and tasty.

Last, but definitely not least in my book, was Cellar Door Chocolates.  Oh my goodness!!!!  It would be worth the trip to downtown Louisville just to go to their store and get more chocolate.  Mercy!  I bought the Brown Sugar Pecan Bark and the Sea Salt Almond Bark and it was almost gone by Sunday afternoon.  It is divine!

So, this was my haul for the day.  I could have bought so much more and just had to control myself not to over do it.  I may not be able to wait until next year for some of these products.  Hmmm, I wonder if they ship?

Good morning and happy almost-Halloween, folks!  Are you ready to hand out candy to all of the little ghosts and goblins in your neighborhood?  We sure are and I hope the weather takes it easy on us that day.  There is a chance for some nastiness, but hopefully it will not be too bad.  It is hard to believe that the end of October is this week and we are staring down the barrel of the holiday season.  Shew, this year has flown right by and there doesn’t seem to be any slow down in sight.  I guess we just better hang on and enjoy the ride!

This past Saturday, C & I went to Lexington, KY for the Kentucky Proud Incredible Food Show and I had a blast!  There will be a full (and I do mean FULL) recap on my Thoughtful Thursday post this week so come on back and check it out.  Also, I will have a few photos from Saturday as well on a Wordless Wednesday post.  The sun was being shy Saturday, but I did manage to snag a few pretty shots of the scenery between home and Lexington.

I have several new recipes on the list to try this week, plus I will probably have a new dessert also that is not listed because I haven’t made up my mind what it will be.  Our church is having their annual chili supper next Saturday night so I will, of course, have to take some chili and a sweet treat.  Happy Halloween and fall, y’all!!

Meatloaf is usually a family pleaser here so I am always happy to find a new variation to try.  This recipe from Kraft has an Italian flair that I really like and the stuffing mix was a tasty alternative to bread crumbs or crushed crackers.  I did have to substitute from the original recipe since the Stove Top stuffing for chicken has chicken fat in it and I am severely allergic to all things chicken.  Bummer!

1 14.5 oz. can diced tomatoes

6 oz. dry stuffing mix

1 lb. extra lean ground beef

1 egg

1/4 cup finely chopped onion

1/2 cup shredded Italian cheese (I used Fiesta blend because that is what I had.)

Preheat oven to 375 degrees.  Mix the tomatoes with the stuffing mix and set half aside.  Add the beef and egg to half of the stuffing mix, combining thoroughly.  Press in a greased 8 inch square baking dish.

Combine the remaining stuffing mixture with the onions and spread over the top of the meat mixture.  Cover with foil and bake for 45 minutes.  Remove the foil and sprinkle the cheese over the meatloaf.  Bake uncovered for 10 more minutes or until meatloaf is done (160 degrees in center).

It is time to get another week started so let’s make it a good one!  C & I had a nice lazy weekend at home so hopefully we are rearing to go today, maybe…hopefully.  These cool mornings sure make it hard to get up because all I want to do is stay in my nice, warm bed for just a little while longer. 

I have a couple of new recipes on the menu for this week and I hope they are both winners.  It has been years since I have made stuffed peppers so I am really excited to try this stuffed pepper soup.  I think I could eat soup every night right now.

I love trying a new twist on an old favorite and this is just that.  Thanks to Real Mom Kitchen, I now have a new main dish in my arsenal.  This was so flavorful and easy, which makes it a perfect weeknight dinner idea.  It is also easy to tweak it to your taste with different pizza toppings. Thanks, Real Mom Kitchen!

1/2 cup diced onion

1/2 lb. ground beef

1/2 lb. Italian sausage

1/8 tsp. ground red pepper

1 tsp. Italian seasoning

1 cup pizza sauce

1 tube crescent roll dough

1/2 cup grated parmesan cheese, divided

1 cup shredded mozzarella cheese

Preheat the oven to 400 degrees and spray a 9×13” baking dish with non-stick spray.  Cook the onion, beef and sauce in a skillet over medium heat until the meat is cooked through.

Add the red pepper, Italian seasoning, and sauce to the meat mixture.  Reduce heat and allow the mixture to simmer for 10 minutes.

Line the bottom of your prepared pan with the crescent roll dough.  Press to seal seams.  Sprinkle 1/4 cup of the grated parmesan over the dough.  Next, spread the meat mixture over this.  Top it off with the mozzarella and the remaining parmesan.

Bake at 400 for 15 to 20 minutes or until the top is golden brown.  Serves 4-6 and goes great with a fresh tossed salad.

Hello again!  Wow, these weeks just seem to go by faster and faster especially the weekends.  I blink and it is time to go back to work again.  This weekend C & I did something that I had not done in YEARS.  We went to a haunted house/woods/hayride called Skeleton’s Lair with a group of our cousins.  Of course, we had to eat first and we did eat at Shogun Bistro which is a hibachi grill restaurant.  That was the first time C or I had ever eat at a place like that and it was good, but pricey!!  We all had a great time though and that is all that matters.  Here’s a photo of the group that went to the haunted house:

I don’t have any new dishes this week.  I know, I am a bad food blogger, but I have a few house cleaning projects that I want to get done so cooking will take a back burner until I get they are finished.

October is in full swing and that means that bloggers everywhere are embracing pumpkin as an ingredient.  I must admit that pumpkin is not my favorite flavor, but I like it well enough.  This month’s Dessert Challenge at Lady Behind The Curtain features pumpkin and cream cheese so I went searching for a new recipe to try.

I really like muffins and it was an easy decision when I found this recipe at Sweet & Crumby.  Her recipe makes 24 muffins so I made a half batch instead.  The muffins are really moist and have a great flavor, but if I make them again, I will probably sweeten the cream cheese just a tiny bit before I put it in the muffins.  Otherwise, this was a really tasty treat!

1 1/2 cups all purpose flour

2 tsp. apple pie spice

1/2 tsp. baking soda

1/2 tsp. salt

1 cup canned pumpkin

5 oz. vegetable oil

1 cup granulated sugar

2 eggs

4 oz. cream cheese, room temperature

4 tbsp. brown sugar

2 tbsp. unsalted butter

1 tsp. cinnamon

1/2 cup chopped pecans, toasted

Preheat oven to 350 degrees and put liners in a muffin pan. Sift the flour, spice, baking soda and salt together on a paper plate and set aside.  In a large mixing bowl, combine the pumpkin, oil, sugar, and eggs.  Add the dry ingredients to the wet and gently stir until combined.  Don’t over mix the batter and don’t worry if there are a few lumps left.

Using a small cookie scoop, fill the muffin tins about 2/3 full. You will have a little batter left over. Cut the cream cheese into 12 pieces and put one piece into each muffin, pressing it down into the batter.  Then spoon a little extra batter over the top to completely cover the cream cheese.

In a separate small bowl, combine the brown sugar, pecans, cinnamon and butter until crumbly.  Sprinkle a little of the topping over each muffin.  Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.  Cool and enjoy!

Welcome back, everyone!  It is Monday once again so it is time for another menu plan.  I finally made it to the big grocery store in the next town over to restock the fridge/freezer/pantry so I can get back to cooking.  Let’s just say that there wasn’t much kitchen action last week and there was a whole lot of eating out going on.  That’s okay occasionally but our local options are kind of limited so it gets old quick.

Last Friday night, C, his parents, and I went to a Charlie Daniels Band concert at the Plaza Theater in Glasgow, KY and had a great time!  The musicians are just amazing to watch and listen to.  There was so much talent on that stage.  Before the concert, we ate at a little local restaurant called A Little Taste of Texas and the food was really good.  The wait was TERRIBLE, but the place is pretty small and they were busy that night.  I had shredded pork BBQ that was really tasty and C had a steak that he said was good as well.

I have one new recipe planned for this week and some old favorites. We may be going to a haunted house with family next weekend (if I don’t run away screaming like a little girl) so we will probably eat out that night.

I am always on the look out for easy supper ideas and this recipe more than fits the bill.  It also includes enchilada sauce which is one of my new favorite flavors.  Why didn’t I know how good this tasted years ago?  The original is a Taste of Home recipe and it is a good one!

1/2 cup chopped onion

1 lb. ground beef

10 oz. can enchilada sauce

6 oz. can tomato paste

4 oz. can chopped green chilies, drained

2 cups shredded cheese (I used Fiesta blend.)

1/2 cup coarsely crushed corn chips

Preheat oven to 375 degrees.  Cook the onion and ground beef over medium heat in a skillet until the beef is no longer pink and the onion is soft. Then stir in the enchilada sauce, tomato paste, and green chilies and cook for 2 to 3 more minutes.

Spread this mixture into a 9 inch baking dish and top with the shredded cheese and corn chips.  Bake for 12-15 minutes until the cheese is melted and bubbly.  Serve with additional corn chips if desired.

This seems to be the summer/fall of never-ending yard work for us.  Usually we will have a few weeks in the summer when it gets hot and dry that we don’t have much to do.  That did not happen this year!  We are still mowing and trimming our little hearts out every week just to keep up.  C & I are going to try to finish pressure washing this week as well (I hope!!!!) so the menu is pretty simple.  We also have a couple of evenings out planned so that also makes the menu a little short.  It makes me a little tired just thinking about it, but it’s all good.
