Pizza Dippers

I may need a Pinterst intervention, because this is yet another recipe I found on there.  It originated from the blog, The Farm Girl, and it is a simple and good dinner or lunch option.  The Farm Girl calls her pizza pancakes, but I preferred pizza dippers for mine because they turned out a little too thick to really call them pancakes.  Next time I make them, I will add just a tad more milk to make them more like pancakes.

The Farm Girl also used pepperoni in hers, but I chose Italian sausage because that is what I had.  I bet pepperoni would be awesome.  C liked them, but thought they weren’t quite enough for a supper but would be good with chili.  We had the leftovers with chili the next day and he was right.  They were great dipped in chili!

2 cups Bisquick baking mix

1 c. milk (Next time, I will add just a little more. Maybe another 1/8 of a cup.)

2 eggs

3/4 c. shredded Italian (Pizza) cheese

1/4 c. grated Parmesan cheese

1/2 lb. Italian sausage, cooked

2 tsp. Italian seasoning

1/4 tsp. Garlic Salt

Pizza sauce, for dipping

Parmesan Cheese, garnish

Heat griddle or skillet and grease, if necessary.  In a large bowl, combine the Bisquick mix, Italian seasoning and garlic salt. Combine eggs and milk and stir into dry ingredients just until moistened. Fold in the cheeses and Italian sausage.

Pour approximately 1/4 cup onto hot griddle, cook until bubbles form on top and edges are dry. Flip and cook until golden brown.

Cut pancakes with pizza cutter in to 4 triangles, garnish with Parmesan cheese, if desired, and serve with pizza sauce for dipping.  Enjoy!

Baked Ziti

I love pasta!  You would think that I have a strong Italian influence in my family, but that is the furthest thing from reality.  No Italian blood here; just a great love for Italian food!  I found this recipe on Pinterest and it was pinned from a great blog, Creatively Domestic.  Here is the link to the original recipe.

There were only 2 little changes I made: I had to use penne pasta because my local grocery stores do not stock a pasta called “ziti” and I used a half pound of ground beef and a half pound of Italian sausage instead of just one pound of one of them.  This is a wonderful dish and will be added to my regular meal rotation.

16 oz. dried penne noodles
1/2 lb. ground beef

1/2 lb. Italian sausage

1/2 cup chopped onion
1/4 teaspoon garlic powder
6 cups meatless spaghetti sauce, divided
1 cup pasta water, reserved from draining ziti
2 cups (8 oz.) shredded Mozzarella cheese
1 cup grated Parmesan cheese

Note about the above photo:  I cooked the ground beef, sausage, onion and garlic powder the day before to save time.  That is what is in the small plastic container.

In a skillet over medium heat, cook the beef, sausage, onion and garlic powder until the meat is completely cooked and the onion is soft.

Slightly undercook ziti, about 8 minutes. Drain, reserving 1 cup of pasta water, set aside.  Preheat oven to 375 degrees F.  In the pot where you cooked the pasta, combine 5 cups of the sauce, reserved pasta water, and the meat mixture.  Reduce heat and simmer for 5-10 minutes.  Add the cooked pasta back in to the pot and stir to combine.

Spoon 1/2 of ziti mixture into 13x9x2" baking dish sprayed with non-stick spray. Sprinkle with Mozzarella and 1/2 of Parmesan cheese. Top with remaining ziti mixture and remaining 1 cup spaghetti sauce. Sprinkle with remaining Parmesan cheese. Bake 25 – 30 minutes or until heated through.

All you need now is a salad and some garlic bread.   Mmmm!! This is also great the next day for leftovers. Just re-heat and serve.

Sloppy Joe Bake

I love being able to take one recipe and make multiple meals from it.  Last week, I posted about slow cooker sloppy Joes and mentioned the recipe for this week.  It is so quick, easy and good!  I found this on Pinterest and it was pinned from the blog Life as a Lofthouse.  She has her own sloppy Joe recipe which looks really good, too, but since I had the leftovers I used my own.

2 cups sloppy Joe mix

2 cans Pillsbury, Big & Buttery crescent rolls

2 cups shredded cheese

Preheat your oven to 350 degrees and spray a 13×9” baking dish with nonstick spray.  Roll one can of the crescent rolls in the bottom of the baking dish.  Layer the sloppy Joe mix and cheese next, then top with the remaining crescent roll dough.

Bake for 30-35 minutes.  This needs to bake for at least 30 minutes so the bottom layer of dough can fully cook.  Slice into squares and enjoy!

Are you looking for a rich and hearty meal with some classic Italian flavors?  Look no further!  I found this recipe on Pinterest, of course, and it was pinned from the blog Creatively Domestic.  This is one of the best soup/stews that I have had in a long time.  I hesitate to call it a soup, because it gets really thick and stew-like which is just fine with me.  Yummy!  I won’t hold you in suspense any longer…here is the recipe.

1 onion finely diced
1 teaspoon olive oil
1/2 tbsp. minced garlic
1/2 lb. Italian sausage

1/2 lb. lean ground beef
2 tbsp. Italian seasoning
1/4 teaspoon salt
1/4 teaspoon red pepper flakes
26 oz. spaghetti sauce
4 cups chicken (or vegetable or beef) stock (I used vegetable broth.)
2 bay leaves
8 oz. pasta

In a large Dutch oven, cook the onion, garlic, and meats in the olive oil until the meats are completely cooked.  (Note: I cooked this the day before so the photo will show a skillet.)

Add the remaining ingredients except the pasta and simmer for 15 to 20 minutes.

Bring to a boil and add the pasta.  Cook for additional 8-10 minutes or until the pasta is al dente.  Enjoy!  I served this with a quick peppery cheese bread that I will highlight next week.  You don’t want to miss it!  They go great together.

A1 Swiss Steak

I am always searching for new ways to use my slow cooker, especially with beef because C loves his beef.  He also loves A1 steak sauce so this was a great combination.  I made this on a Sunday and used the leftovers for shredded beef sandwiches during the week.

2 lb. boneless beef chuck eye roast, cut into 1-inch pieces

1/4 cup A.1. Original Steak Sauce

1 onion, sliced

1 can  (14-1/2 oz.) diced tomatoes, undrained

2 Tbsp. flour

1/4 cup water

Toss meat with steak sauce; place in slow cooker. Top with onions and tomatoes; cover with lid.

Cook on LOW 9 to 10 hours (or HIGH 4 to 5 hours).

Mix flour and water. Stir into meat mixture; cook, covered, 5 min. or until sauce is thickened, stirring occasionally.

Pineapple Pork Loin

Do any of my blogging readers have a go-to recipe that you realized recently that you have never written a post about?  Well, I do and here it is. This is a recipe that I made up myself years ago and for some reason I have never posted it here.  I must remedy that today because this pork loin is quick, easy, and comes out so tender and juicy. 

1 pork loin, approximately 2 lbs.

1 20 oz. can pineapple chunks in syrup

2-3 cups orange juice

seasoning salt

Pour the orange juice into a slow cooker.  Put the pork loin into the juice and sprinkle liberally with seasoning salt.  Finally, pour the pineapple chunks and juice over the pork and cook on low for 4-6 hours or until the internal temperature is at least 165.  That’s all there is to it.  Enjoy!

Biscuit Taco Bake

Most Monday nights, C & I eat supper with his parents.  I usually fix food that night and am always looking for a great new one dish supper that is easy to transport.  This is another one of my Pinterest finds.  In fact, a lot of the new recipes coming up are from there.  Check it out and if you want to follow me, my username is picperfcooking.

This is a great fix it and go meal.  I left mine pretty plain, but you can top it with any taco fixings you like such as shredded lettuce, sour cream, or salsa.  Give it a try!

1 pound hamburger
2/3 cup water
1 packet taco seasoning
2 tubes (12 oz. each) refrigerated buttermilk biscuits
1 (15 oz.) can chili (or 1 1/2 cups leftover chili which is what I used)
1 cup + shredded cheddar cheese

Note: I fixed the taco meat the day before so that is why all of the different ingredients are not pictured.

Brown the ground beef then add the water and taco seasoning. Cook, uncovered, on medium-low until the liquid evaporates.

Preheat the oven to 350 degrees and prepare a 13×9” baking dish.  Quarter the biscuits and place in the prepared dish.

Layer the taco meat mixture next, then add the chili and cheese.  Bake for 25 to 30 minutes until the biscuits are golden brown.  Enjoy with your favorite taco toppings.

Pepsi (or Coca Cola) Pork Chops

I have found so many new great recipes on Pinterest!  It is addicting to scroll through ideas from so many different people.  Here is the link to my Recipes To Try board. 

One of my favorite meats to cook with is pork chops and it really doesn’t matter how they are fixed.  Baked, grilled, broiled, fried, any old way is fine with me.  When I find a new recipe for chops, I usually try it out on my family at our weekly Sunday dinner.  This one was a winner!  I wish I had bone-in chops to use instead of boneless because I think they have a much better flavor and are usually more tender.  These were still pretty darn good even with the boneless.

1/2 cup firmly packed brown sugar

2 cups ketchup

2 cups Pepsi (I only had Coca-cola in the house so I used that.)

2 tbsp. onion flakes

2 tsp. Italian seasoning

8 pork chops

Preheat oven to 350 degrees and prepare a 13×9” baking dish.  Mix together all ingredients except the chops.  Place the chops in the dish and pour the sauce over them.

Bake for 1 hour.  Enjoy!

Chunky Vegetable Soup

When I was little, you could not have paid me enough to eat a bunch of vegetables.  It is amazing what a little age will do for you.  Now, I actually crave a good hot vegetable soup and am always on the lookout for a new one to try.  I found this recipe on Pinterest and used it as my starting point.  The only reason I changed a few things was because I didn’t have the ingredients on hand, so I improvised and it turned out really good if I do say so myself.  I ended up making it twice in the same week that I tried it because I wanted to share it with both sides of our families.  Everyone seemed to really like it so it will definitely go in my cold weather rotation.

1 tbsp olive oil

1 onion, chopped

1/4 tsp. minced garlic

2 stalks of celery, chopped

3 carrots, chopped

1 Bay leaf

Kosher salt and fresh ground pepper

2 x cans of chopped tomatoes (14oz)

1 1/2 litres vegetable broth

1 cup of pasta (your choice)

In a large saucepan over medium heat, add the oil, onion, carrots, celery, minced garlic, salt, and pepper.  Cook just until the vegetables are soft.  Add the tomatoes, broth and bay leaf. Simmer for 15 minutes then add the pasta.  Cook for another 8-10 minutes and enjoy!  This is great with cornbread, by the way.  Serves 4 to 6.

Slow Cooker Maple Ham

For the last couple of years, I have made the ham for C’s family’s big holiday meals.  I usually go with my citrus crock pot ham because it is quick and easy, but I tried something a little different this time and it was so good.  As usual here lately, I found this recipe on Pinterest and it was posted from the blog, Beyer Beware.  It, too, is a quick and easy recipe and the maple syrup gives it a little extra kick.  This is definitely a keeper.

1 spiral sliced ham (Mine was a little too big for my slow cooker so I had to slice it off the bone to fit.)

1/2 cup brown sugar

1/2 cup real maple syrup

8oz can crushed pineapple

Real maple syrup is usually expensive, but I have a supplier.  C’s cousin began making maple syrup last year on his farm here in good ol’ South Central Kentucky and it is so good!! I had just enough left over for this ham.

Since I sliced the ham off the bone, I cooked this in layers.  Put half of the ham in the slow cooker then sprinkle with 1/2 of the brown sugar.  Pour half of the syrup and pineapple over that and repeat.  Cook on low for 4-6 hours or until heated through.
