Another week has flown right by and it is time for another menu post. This week’s list is full of old favorites that are quick and easy.  We are supposed to have some beautiful weather finally so I am hoping to get outside and enjoy it as much as possible.  Of course, raging spring allergies might put a little damper on my plans, but I will suffer through it with medication if I have to.

C & I spent Saturday afternoon mowing, trimming and weeding our yard and his parent’s yard and they look so nice and clean.  Our little garden is really starting to grown and I even picked a few ripe strawberries this week. They were so tasty!  See:

Have a great week!

Welcome to another edition of Menu Plan Monday hosted by I’m An Organizing Junkie where I, and other food loving bloggers, share what we plan to eat this week.  There are so many talented people linking up there and I hope you take the time to visit a few and see what goodies they are cooking.

After a warm start to the week, it is supposed to be cool and rainy later so I am going to sneak in a few cool weather comfort foods before summer hits with a vengeance. The rain we had over the weekend was just what my little garden needed to spring into life.  I am hoping to start harvesting a few things in the next week or two.  There are tons of green strawberries out there and the lettuces and carrots are sprouting like crazy.  I can’t wait!!

Have a great week, everyone, and I hope God blesses your socks off!

Wow, the weeks are rolling by so fast, but we are also getting so much accomplished outside.  Our little garden is planted and growing well and I even have my flower pots filled with all kinds of blooming pretties.  Hopefully, there will be a few more odds and ends accomplished this week, like mulching and trimming.  I just love this time of year even if I am worn completely out. It is a good kind of tired.

This week’s menu contains a couple of new recipes that I hope to have time to try and the rest of the week is good old favorites.  I hope the weather is as nice where you are as it is supposed to be here.  Get out and enjoy!

Enchilada beef dip with chips and salad

Sausage bake with salad

Italian burgers (new) with oven baked fries

Hopefully I can now get back into the blogging swing of things and keep up with what is going on around here.  This week’s menu is pretty simple since, you know, it’s SPRING and I get to be OUTSIDE so much more.  Have a great week and I hope you feel blessed beyond measure.

Hi, folks!  I am posting this a day early because I have a photo challenge post going up tomorrow and I decided two posts in one day was probably a little much.  I hope everyone has had a wonderful weekend. Ours was busy, but good.  C & I got an eye exam on Saturday and I am now officially old because I have to have bifocals.  Yuck!  I knew I was having trouble reading, but I really hadn’t considered the fact that bifocals may be needed.  When the doctor adjusted the lens with the bifocals it made a huge difference and I hope they help my eyes feel less tired by the end of a long day working at a computer.  Oh, well, I guess it could be worse.  I can still see after all!

It was also a great weekend of college basketball and we cheered on the University of Kentucky as hard as we could.  It was so much fun!!

The weather is supposed to be really nice this week and I hope to get outside and start cleaning up the flower beds and maybe starting building my new raised beds with a lot of help from C.

Have a great week!

Good Monday morning! Sorry I was MIA last week, but I just wasn’t feeling up to snuff.  I thought it was just the winter weather blues until I started having tons of sinus drainage by the end of the week.  It turns out I was rocking a pretty severe sinus infection so after a shot and a few pills, I feel SO much better! Now that I am back to normal, there are so many things I want to do!

C & I are planning to update our raised gardens beds with cedar boards and add a couple of extra beds while we are at it.  I can’t wait! Now if the weather will just cooperate.  Speaking of gardening, please check back on Wednesday to see how my seedlings are doing.

I have a couple of new recipes on the list this week that I hope are keepers.  I will let you know!

Dr. Pepper pulled pork (new) with curly fries

Tacos with salad

Grilled hamburgers with oven fries

Panko pork chops (new) with butter roasted potatoes & salad

Pizza night

One pot baked rotini with cheesy bread

Well, folks, there is light at then end of the tunnel.  We have had warmer temperatures and sunshine finally in the last few days.  What a change from last Monday and Tuesday when we were being bombarded with this:

I am so glad to see all of that mess gone!  I was so inspired by the warmer weather that I started a few seeds on Saturday.  Our breakfast table is now temporarily a gardening table.

We have a couple of fun things going on this week so I am keeping the menu on the simple side.  Our local library is having a photography class one evening and I am excited about that.  Then the second annual Kentucky Green Living Fair is next weekend in Somerset and we can’t wait!  Last year’s fair was so much fun and informational so I expect this year will be even better.  If you are in the area, come and check it out.

I am including one new recipe to try if time permits.  Have a great week!

Chili/Vegetable soup (I have lots in the freezer that needs to be eaten.)

Southern Plate’s Deep Dish Pizza with fresh fruit

Tacos with salad

Panko Pork Chops (new) with oven baked fries and salad

Baked ziti with cheesy bread

Welcome to another Polar Vortex edition of Menu Plan Monday.  Yes, you read that right-another winter storm is rearing its ugly head.  In fact, I am writing this post on Sunday since I am not sure whether we will have electricity because there is a possibility of serious icing.  Ugh, spring can’t get here fast enough for me.

C & I did make the most of a pretty Saturday by heading down south to Nashville for a little fun and relaxation.  Lots of eating and shopping went on so check back on Thursday for all of the details.  The restaurant we tried was wonderful!

I get to have a root canal later this week (oh, joy) so this week’s menu is pretty simple and straight forward.  I do have a new sweet treat to try next weekend, but thankfully they are being given away as thank you gifts so I won’t be tempted to eat the whole pan.

Hope it’s warm and dry where you are and I wish I was there too!

Chili/Spicy vegetable soup (I have both in the freezer.) with cheesy bread

Beef & cheese sandwiches (new) with oven fries

Sausage bake with salad and fruit

Pizza night

Salsa burgers with oven fries

Cheesy meatloaf minis (new) with curly fries

Raspberry brownies (new)

Here we are on the last Monday in February and hopefully Spring is just right around the corner.  I am excited about the time change next weekend and gaining that extra hour of evening daylight.  It makes the time after work so much enjoyable to be able to get outside in the sunshine even for just a few minutes.

Since I am trying to watch what I eat a little better, this past Saturday’s post will be the last dessert post for a little while.  I am concentrating on main dishes that are quick, easy, tasty and fairly healthy for the next few weeks.  Don’t worry though, I have too much of a sweet tooth to go too long with a treat.

On this same “healthy” line, I have a post in the works about a few apps and gadgets that I am using to keep track of my exercise and eating habits.  Most are free which is awesome and all are easy to use.

Have a wonderful and blessed week!

Sloppy Joe bubble up (new) with fresh fruit

Pizza triangles (new) with salad

Cheesy steak sandwiches with oven baked fries

Grilled hot dogs with oven baked fries

A Southern Soul’s Slow Cooker Roast (new) and butter roasted potatoes

Just wait ‘til you see what I do with the roast leftovers.  Thanks, A Southern Soul for the idea!

Good morning, my dear readers!  We have survived another little winter “clipper” over the weekend and this week the temperatures are supposed to be in the fifties and sixties.  Yay!!!  Last Friday evening, our yard was full of robins and I took this as a sure sign that spring is on the way.  If it’s not, don’t tell me.  I like living in my little fantasy world when I can.

Last week’s menu was a bust.  Do you ever have those weeks when you just don’t feel the best?  That was me last week.  I wasn’t sick and there really wasn’t anything bothering me, but I was tired all week so most of the cooking kind of went out the window.  Actually, it was more of in the window since I did hit the drive-thrus a couple of times.

This week should be better so much of last week’s menu has been postponed to this week.  Have a wonderful and blessed week! Oh, and Happy President’s Day!

Sliders with oven baked fries

Easy deep dish pizza with salad

Tacos with fresh fruit

Italian breaded pork chops (new) with butter roasted potatoes & salad

Spicy beef vegetable soup or chili
